Semi-hard cheese, with a compact paste aged for some months, characterized by a delicate goat’s milk scent.
Tasting & other Notes: The rind is thin, straw yellow in colour; the paste is compact, white in colour and has few holes. The taste is slightly sweet and sapid, the prolonged aroma is intense, with pleasant vegetal notes from boiled vegetables and wood. The aftertaste is round and long, with scents of wood and perfumed flowers.
